Quinoa is very versatile in the kitchen. One of the simplest ways of using it is as a straight replacement for rice or cous cous. Now if you are interested in authentic Indian curries or Moroccan cuisine then you are not going to want to substitute anything for the correct ingredients.

But it is actually a very healthy alternative because it is full of vitamins and nutrients. It also has a nutty and crunchy texture that lends itself very well to these dishes.

Quinoa instead of rice.

This very simple substitution works very well for mild and medium spiced foods. If you like hot curries then quinoa is not quite as good as rice at reducing the strength of the food. In this case it is best to over cook the quinoa to help combat the spiciness of the curry.

For other dishes such as tabouleh and risotto it is ideal instead of rice. I would say preferable to rice because you do not get the starchiness. No post rinsing is needed. You can serve it straight from the pan. You can use it instead of rice in desserts but it does not perform as well here as with the savoury dishes.

Cous cous is found very often in salads mixed with other vegetables. You can combine it with peppers and green leaf salads to make an endless combination of quickly prepared meals. Quinoa is an ideal replacement for cous cous but it does not keep as well once it has been prepared. You can keep it in a fridge for 2 days in an airtight container quite safely. After that it can lose its texture. It is better to prepare what you need on the day. Any left overs can be used as a packed lunch snack.

The best way of finding out about replacing rice and cous cous with quinoa is simply to try it. Be adventurous and you will find it very easy to use in your favourite recipes.

Sangaray Or Water Chestnuts Are Used As Medicine in Pakistan cuisines

Now the monsoon season is over and the flood waters are receding here in Pakistan, there has been a tremendous amount of devastation. In the local bazaar the price of chicken has plummeted, because poultry farmers are desperate to sell their birds because the buildings which housed them have been destroyed in the floods. This is good news for the consumer at the present time, but the flip side is that the price of eggs has gone through the roof.

We now have bright red carrots in the bazaar and my husband came home with water chestnuts when he went to the old Raja Bazaar earlier this week. These are called ‘sangaray‘ here and although Pakistani cuisine doesn’t seem to include them as do cuisines of South-East Asia, they are used in medicine.

If you’ve never eaten fresh water chestnuts you may wonder why they have this name as what do tuberous roots of a water plant have in common with a nut? The answer is – the taste. Some of these sangaray taste like chestnuts that have been roasted on a brazier; others have a more floral taste. Whichever variety I have eaten here though, have tasted very different to the canned ones I used in Europe.

In Pakistan these water chestnuts are often powdered and used to make roti (chapattis) and the water left after boiling them is mixed with a few water chestnuts, liquidized and given to children suffering from measles. They say that sangaray have cooling properties and so are good for heatstroke and fevers. The powdered water chestnuts mixed with milk or water is said to be good for urinary tract infections such as cystitis, and the juice from these edible roots is used to cure indigestion and nausea.

They look a lot like mouth-watering chocolates in their hard shell casing and need to be boiled until the shell is softer. I eat then fresh from their shells which may be why I think they are like roast chestnuts which are found on street corners in Portugal, and Greece at this time of year.

Unfortunately in this part of the Punjab (Islamabad/Rawalpindi) we can’t find these in our local bazaar. The vegetable seller asked my husband how to cook them, so they are not as widely relished here we suspect as they are in the southern Punjab around Lahore. There the water chestnut season is eagerly awaited and it is said that they will cure any fevers that occur after the monsoon. Touch wood I haven’t had one yet, but it is good to know that a delicious cure is at hand.

Where Does Italian Food History Begin? cuisines

Italy is one of the oldest countries in the world, and thanks to the geographical boundaries of the Mediterranean Sea and the Alps it has remained largely unchanged throughout history. Even during the Roman Empire, Italy was set apart. Legions that had been abroad always knew when they had returned to the mother country. Italian food history, however, reaches far beyond the country’s borders.

For starters, look at pasta. There is much historical debate on its origins, but many historians point to Marco Polo’s voyages to the Far East, from which he returned with all manner of foreign spices and foods, as the venue from which pasta came. The Chinese had cooked with noodles for centuries, and Marco Polo’s men encountered the same on their travels.

The tomato, now considered a staple in Italian cuisine, was long thought to be poisonous, partly because it is related to the deadly nightshade plant. Other Europeans found it to be palatable long before the first Italian cook simmered some down to make tomato sauce.

The Greeks, neighbors and frequent military rivals of the Italians, had a great amount of influence on Italian cuisine, especially in the area of spices and the preparation of seafood. Calamari, or squid, now a common dish on every Italian restaurant menu, was originally something Greeks were known for consuming.

The Roman Empire’s excursions into North Africa were another fertile breeding ground for culinary expansion. The number of herbs, spices and vegetables that entered the Italian menu from Egypt and the other African territories is uncountable.

Even today, Italian food history continues to evolve. Much of the changes now, though, take place beyond the shores of Italy. In America, for example, chefs like Mario Batali have fused classic Italian dishes with American cuisine to come up with dishes that combine the best of both worlds. In cities and towns all over the country, chefs are taking traditional ingredients and combining them in new ways. In what could perhaps be called a “full-circle” journey for pasta, some Italian-Asian fusion restaurants are even beginning to evolve.

But perhaps the best way to get a full idea of Italian food history is to get out and eat some. Better yet, eat a lot! Eating Italian food is always better than Italian food history.
